Sweet Semolina Pudding

Ingredients
- 250 g groats
- 150 g sugar
- 2 tbsp butter
- 1 lemon
- 150 g whole wheat bread
- 3 eggs
- 2 tbsp breadcrumbs
- 500 g berries

Soak the groats overnight in water. Drain. Let them soften with 1 tbsp sugar and 300 ml water over low heat for ½ hour. Stir in 1 tbsp butter, then cool.

Grate the lemon zest and squeeze out the juice. Finely crumble the whole wheat bread. Separate the eggs; beat the egg whites until stiff peaks form.

Mix yolks, lemon juice and zest, 100 g sugar, and the bread with the groats. Fold in the beaten egg whites.

Grease a pudding mold and its lid well, then dust it with breadcrumbs. Pour the mixture into the mold, seal it, and place the mold in a large pot. Fill the pot with water up to the level of the filled mold. Seal the pot and let the pudding gently simmer for 1½ hours.

Meanwhile, wash and clean the berries. Boil them once with ¼ l water and the remaining sugar, then remove from heat and cool.

Let the pudding cool in the mold for ½ hour, then pour it out. Serve warm with the berry compote.
