Wraps with Feta and Vegetable Filling

Wraps with feta and vegetable filling from Spoonsparrow are always really good as lunch or dinner. Ideal for taking away.

Ingredients

  • 2 tbsp black, pitted olives
  • 3 green mild peppers (canned)
  • 3 tomatoes
  • 1 green bell pepper
  • 80 g cucumber (1 piece)
  • 200 g feta
  • 1 tbsp Lemon Juice
  • 2 tbsp olive oil
  • Salt
  • Pepper
  • 4 whole wheat tortillas (approx. 22 cm diameter)

Instructions

    Drain the olives and peppers and chop them finely. Wash, clean, quarter, remove the seeds from the tomatoes and peppers, and dice them. Clean, wash, and deseed the cucumber, then dice it finely as well. Crumble the feta and mix it with the vegetables, lemon juice, and oil. Season with salt and pepper.

    Warm the tortillas slightly according to package instructions, spread the vegetable-feta mixture on them, leaving a 2 cm wide border. Fold the opposite sides slightly towards the center and roll up the wraps. Halve them in the middle and serve on 4 plates.
