Whole grain salmon sandwich with creamy cucumber quark and spinach: A snack as a culinary contrast of smoked fish and bread roll

Ingredients

  • 1 Mini Cucumber
  • 0.5 small lemon
  • 4 tbsp Low-fat Quark
  • Salt
  • Pepper
  • 1 small handful young spinach
  • 1 small Shallot
  • 1 small Whole Grain Baguette Roll (or other whole grain roll)
  • 40 g Smoked Salmon (sliced)

Instructions

    Wash the cucumber hot, pat dry and halve lengthwise. Remove the seeds with a teaspoon. Grate the cucumber finely on a box grater.

    Place the grated cucumber in a clean kitchen towel and squeeze it very firmly over a bowl. Discard the liquid.

    Add the grated cucumber to the bowl. Squeeze the lemon half. Mix the lemon juice and quark with the cucumber. Season with salt and pepper.

    Wash the spinach thoroughly several times in cold water and then spin it well dry.

  5. 5.

    Peel and finely chop the shallot. Halve the baguette roll and spread the quark cucumber on one half.

  6. 6.

    Top with spinach leaves and smoked salmon, sprinkle with chopped shallots. Place the second roll half on top.
