Smart Pasta Bolognese
The Spoonsparrow basic recipe for Smart Pasta Bolognese is not only delicious but also really healthy!
Ingredients
- 2 onions
- 2 cloves garlic
- 150 g Celery Root (1 piece)
- 150 g carrots (2 carrots)
- 3 sprigs fresh rosemary
- 3 tbsp olive oil
- 500 g lean beef mince
- Salt
- Pepper
- 30 g tomato paste (2 tbsp)
- 800 g chopped tomatoes (canned)
- 400 g whole wheat spaghetti (or whole wheat macaroni)
- 2 tsp dried oregano
Instructions

Peel and chop the onions and garlic. Clean, peel, and coarsely grate the celery root and carrots. Wash, dry, and chop the rosemary.

Heat the oil in a deep pan. Add the minced meat and onions and brown over high heat for 8-10 minutes. Then add the vegetables and garlic and sauté for 2-3 minutes. Season with salt and pepper.

Add the tomato paste and sauté for 1 minute. Pour in 200 ml of water, then add the tomatoes and rosemary and simmer the sauce covered over low heat for about 30 minutes, stirring occasionally.

15 minutes before the end of cooking, cook the pasta al dente according to package instructions in plenty of boiling salted water. Then drain in a sieve and let it drip.

Finally, season the bolognese sauce with salt, pepper, and oregano and serve with the pasta. Sprinkle with grated Parmesan and fresh parsley if desired.
