Wok Noodles with Beef and Vegetables

Ingredients
- 200 g beef fillet
- 1 tsp starch
- 100 g snow peas
- 1 red and green bell pepper
- 0.5 bunch scallions
- 2 Garlic cloves
- 250 g medium Chinese egg noodles
- 6 tbsp vegetable oil
- 1 tsp rice wine
- 3 tbsp Soy sauce
- 5 tbsp meat broth (from the can)
- Salt
- Pepper
- 1 red chili pepper
- coriander leaves (for garnish)

Wash and pat dry the beef, slice into strips, and mix with starch. Clean snow peas and trim ends. Halve bell pepper, remove seeds, wash, and cut into strips. Trim scallions, wash, and chop into pieces. Peel garlic and roughly chop. Wash chili and slice into thin rings.

Cook noodles in boiling water according to package instructions, drain, let dry, and toss with 1 tbsp oil. Heat 2 tbsp oil in a wok over high heat, quickly stir-fry beef. Add rice wine and 1 tbsp soy sauce, mix, remove beef. Heat remaining oil, add snow peas, bell pepper, scallions, and garlic; stir-fry for 3 minutes. Add noodles, pour in broth, season with remaining soy sauce, salt, and pepper, return beef, mix well, divide into paper cups, garnish with chili rings and chopped coriander.
