Pasta gratin with kale and mushrooms

Ingredients
- 400 g tube-shaped pasta e.g., penne (green and white)
- Salt
- 400 g kale
- 200 g mushrooms
- 2 tbsp butter
- Salt
- 400 ml heavy cream
- 4 eggs
- 50 g crème fraîche
- 100 g grated cheese e.g., Emmental
- nutmeg
- black pepper (freshly ground)
- butter (for the pans)
Instructions

Cook the pasta in salted water until very al dente. Rinse with cold water and drain. Wash, trim, and blanch the kale for about 5 minutes in salted water; rinse and cut into strips. Clean the mushrooms and halve or quarter them depending on size. Brown them in hot butter, season with salt and pepper, and set aside.

Preheat the oven to 180°C (356°F) fan‑forced. Whisk together the cream, eggs, crème fraîche, and cheese; season with salt, pepper, and nutmeg.

Combine the pasta with the kale and mushrooms, distribute into four oven‑proof, buttered ramekins or portions. Pour the egg‑cream mixture over them and bake in the oven for about 30 minutes until golden brown.
