Ingredients
- 20 g ground flaxseed (2 tbsp)
- 150 g dried figs
- 150 g dried apricots
- 150 g dried dates
- 100 g raisins
- 3 eggs
- 1 pinch salt
- 1 tsp cinnamon
- 6 tbsp milk (3.5% fat)
- 5 tbsp Honey
- 0.5 organic lemon (zest and juice)
- 250 g spelt whole‑grain flour
- 2 tsp Baking powder
- 100 g Hazelnuts
- 100 g almonds
Instructions

In a small saucepan mix 50 ml water with ground flaxseed, stir and let soak for 10 minutes.

Meanwhile cut figs, apricots, dates and raisins into large pieces.

Whisk the soaked flaxseed with eggs, salt, cinnamon and milk until lightly frothy, then fold in honey, lemon zest and juice.

Stir in flour and baking powder. Fold nuts, almonds and dried fruit into the batter.

Transfer dough to a loaf pan lined with parchment paper and bake in a preheated oven at 180 °C fan‑forced for 60 minutes until golden brown; cover with foil after 45 minutes.
