Ingredients

  • 250 ml milk
  • 1 pinch salt
  • 60 g Butter
  • 150 g flour
  • 4 eggs

Instructions

    Preheat the oven to 200°C (400°F) on both top and bottom heat.

    Bring the milk, salt, and butter to a boil in a small pot. Remove from heat and pour the flour all at once into the liquid.

    Stir well with a wooden spoon until smooth.

    Return the mixture to low heat and stir vigorously until the dough separates from the bottom of the pan and a white film forms on the surface.

    Transfer the mixture to a bowl, let it cool slightly, then gradually fold in the eggs one by one so that they combine well with the brioche dough. Knead everything into a smooth, elastic dough and fill a piping bag fitted with a plain tip.

    Pipe dollops of dough onto a baking sheet lined with parchment paper in the desired size and shape, and bake in the preheated oven for 15–20 minutes until golden brown. Remove from the tray and let cool.
