Whole Grain Bread Irish Style
Irish-style whole grain bread is a perfect after-work recipe – quick to make, healthy and with fresh ingredients.
Ingredients
- 42 g fresh yeast (1 cube)
- 800 g wheat whole grain flour
- 200 g rye whole grain flour
- 1 tbsp salt
- 3 tbsp sunflower oil
- 2 tbsp sunflower seeds
- 2 tbsp rolled oats
- flour for dusting

Whisk the yeast into 500 ml lukewarm water until smooth. In a bowl combine the flours and salt, then pour in the dissolved yeast and oil. Knead with an electric hand mixer’s dough hooks until a smooth dough forms; add more lukewarm water or flour if needed. Cover and let rise for 40 minutes in a warm spot.

On a floured surface knead the dough again, incorporating the sunflower seeds. Shape the dough into a long strand and place it in a greased loaf pan lined with rolled oats. Brush the top with lukewarm water and sprinkle the remaining oats over it. Cover and let rise for another 15 minutes.

Preheat the oven to 210 °C (410 °F) with both fan and conventional heat. Slide the loaf onto the middle rack of the preheated oven and bake for about 60 minutes, until the crust is golden brown and a tap on the bottom sounds hollow. Remove from the pan, transfer to a wire rack, and let cool before slicing.
