Winter Salad

The winter salad from Spoonsparrow tastes wonderfully spicy and is full of vitamins and minerals.
Ingredients
- 4 Chicorée
- 3 Stalks Parsley
- 2 Kiwis
- 2 tbsp hazelnut kernels (15 g)
- 300 g Comté cheese (45% fat in solids)
- 1 star anise
- 4 tbsp olive oil (40 ml)
- 1 tsp Honey
- 4 tbsp white wine vinegar (60 ml)
- Salt
- Pepper

Wash chicory and parsley, trim the chicory and cut into strips. Shake parsley dry, pluck leaves and chop. Peel kiwis, quarter lengthwise and slice. Roughly chop hazelnuts and cube Comté cheese.

For the dressing crush star anise in a mortar and whisk with oil, honey, and vinegar. Season with salt and pepper.

Toss chicory, parsley, kiwis, and Comté loosely with some dressing and arrange on plates. Drizzle remaining dressing over the salad and sprinkle hazelnuts on top. Serve the winter salad with chicory and kiwi.
