Pickled Dried Tomatoes

Pickled dried tomatoes are easy to prepare and perfect for salads, breads, antipasti or as a snack.

Ingredients

  • 50 ml white balsamic vinegar
  • 75 g dried tomatoes
  • 2 Garlic cloves
  • 1 dried peperoncino
  • 100 ml olive oil

Instructions

    Boil the vinegar with 1 l water and pour over the tomatoes. Let soak for 20 minutes, then drain well, spread on a kitchen towel and let dry for about 2 hours.

    Pour tomatoes into a sieve, drain well, spread on a kitchen towel and let dry for about 2 hours.

    In the meantime peel garlic cloves and roughly chop or slice them. Crumble peperoncini and layer alternately with garlic and tomatoes in a jar. Cover with oil, seal tightly, and store cool and dry.
