Winter Apple Bake

Ingredients

  • 2 EL raisins
  • 2 EL rum (or apple juice)
  • 4 large apples (e.g., Boskop)
  • Lemon juice
  • 0.5 TL cinnamon
  • 3 EL Sugar
  • 100 g marzipan base
  • 35 g breadcrumbs
  • 3 EL lingonberry jam (glass)
  • 2 EL chopped almonds
  • 30 g melted butter
  • 60 g mixed, chopped nuts (hazelnuts, almonds, pine nuts, macadamia nuts)

    Soak a Romertopf.

    Soak the raisins in rum.

    Wash the apples, dry them and cut off a small lid. Carefully remove the core cavity and some flesh with a melon baller, being careful not to break through the apple bottom.

    Drizzle the apples with lemon juice and place them in a buttered Romertopf. Mix cinnamon and sugar and lightly sprinkle over the apples. Combine the marzipan mixture with breadcrumbs and lingonberries, then fold in drained raisins and chopped almonds. Fill the hollowed apples with this mixture and drizzle melted butter on top. Sprinkle remaining cinnamon-sugar and scatter mixed nuts. Cover and place the apples in a cold oven. Bake at 200°C (convection) for about 45 minutes. Ten minutes before finishing remove the lid to allow the apples to brown slightly. Serve with vanilla sauce if desired.
