Wild Rice Salad with Radishes and Ginger

A fresh wild rice salad featuring radishes, ginger, lemon zest, arugula, and a bright citrus‑honey dressing from Spoonsparrow!
Ingredients
- 1 tbsp freshly grated ginger
- 2 red onions
- 2 lemons (juice and zest)
- 2 tsp Liquid Honey
- Pepper
- 2 tsp green peppercorns
- 200 g Wild rice
- Salt
- 0.5 tsp cumin
- 1 bunch arugula
- 1 bunch radishes
- 6 tbsp sprouting oil
Instructions

Peel the onions and dice them very finely.

Mix lemon juice with honey, pepper, and green peppercorns; stir in onion and ginger and let rest for about 30 minutes.

Bring wild rice to a boil with 400 ml water, salt, cumin, and lemon zest; simmer over low heat for about 45 minutes, then cool.

Wash, dry, and roughly chop the arugula. Peel, wash, and slice the radishes into thin rounds.

Combine all ingredients in a bowl. Whisk the onion‑ginger dressing with oil, season with salt and pepper, and fold it into the salad.

Serve on plates immediately or chill before serving.
