Wild Rice Salad

Ingredients

  • 150 g wild rice
  • 100 g butter
  • 250 g mushrooms (champignons, cleaned, sliced)
  • 1 clove garlic (chopped)
  • 2 tbsp dry red wine
  • 3 stalks celery
  • 100 g pecans (chopped)
  • 50 g Raisins
  • 2 tbsp Red wine vinegar
  • 2 tsp grated orange zest
  • 2 tbsp Orange juice
  • 2 tbsp olive oil
  • 1 tsp sugar

Instructions

    Boil rice in double the amount of salted water and simmer covered over low heat for about 25-30 minutes. Drain excess water.

    Sauté mushrooms in hot butter until golden, add garlic and cook briefly, then pour in wine and let simmer for a few seconds.

    Wash, trim, and slice celery into thin strips. Combine rice, celery, and mushrooms with the remaining ingredients in a bowl and mix well. Season to taste.
