Wild Garlic Quark and Tomato Toast

Ingredients
- 80 g fresh wild garlic leaves
- 1 bunch chives
- 200 g quark
- 3 tbsp whipping cream
- Salt
- pepper (from grinder)
- paprika powder
- 1 tsp lemon juice
- 125 g soft butter
- 4 tomatoes
- farmer's bread
Instructions

Wash and pat dry the wild garlic and chives. Set aside some wild garlic leaves. Finely chop the remaining wild garlic with the chives into thirds.

Stir quark with cream and one‑third of the herbs. Season with salt, pepper, paprika and a splash of lemon juice.

Combine butter with the second third of herbs, a bit of lemon juice, salt and pepper using a fork.

Wash, pat dry and slice the tomatoes.

Spread the bread slices with wild garlic butter. Spread one‑third with quark, top another third with tomato slices and season with salt and pepper; leave the rest simply brushed with wild garlic butter. Sprinkle the remaining sliced herbs over the tomato‑topped breads. Arrange the breads on a plate with the reserved wild garlic leaves.
