Ingredients

  • 50 g Pine nuts
  • 80 g parsley
  • 2 Garlic cloves
  • 2 tbsp grape seed oil
  • 100 ml olive oil
  • 2 tbsp freshly grated Pecorino
  • Salt
  • Pepper (freshly ground)
  • 1 splash Lemon juice

Instructions

    Roast the pine nuts in a dry pan until golden brown and fragrant. Remove and let cool. Rinse the parsley, pluck the leaves, and pat them dry.

    Peel the garlic cloves. Combine the parsley, pine nuts, garlic, and grape seed oil in a blender. Blend and slowly drizzle in olive oil until a smooth pesto forms.

    Stir in Pecorino and season with salt, pepper, and lemon juice. Transfer to a small jar, cover with olive oil, and seal.
