Wild Garlic Hummus

This delicious wild garlic hummus from Spoonsparrow has a lot to offer – it tastes aromatic, is long-lasting, and is lightly spicy thanks to chili flakes.

Ingredients

  • 225 g Chickpeas (drained weight; canned)
  • 1 tbsp Lemon Juice
  • 1.5 tbsp olive oil
  • 15 g Tahini (1 tbsp)
  • 0.5 tsp cumin
  • 0.25 tsp Salt
  • 0.25 tsp Pepper
  • 0.25 tsp Sweet paprika powder
  • 50 g Wild garlic (1 bunch)
  • 0.25 tsp Chili flakes

Instructions

    Drain the chickpeas in a sieve and rinse under cold water. Set aside 1 tbsp of chickpeas for garnish. Place the remaining chickpeas in a food processor and coarsely chop them.

    Add lemon juice, oil, tahini, cumin, salt, pepper and paprika powder and blend until a creamy mass is formed.

    Wash the wild garlic, shake it dry and chop it very finely. Add the wild garlic to the food processor and blend for a few seconds.

    Fill the wild garlic hummus into a bowl and garnish with the remaining chickpeas and chili flakes. Drizzle with a little olive oil to taste.
