Classic Apple Cake – Healthy

Klassischer Apfelkuchen von Spoonsparrow aus lockerem Hefeteig: Für ernährungsbewusste Fans von feinem Kuchen: Fast ohne Fett, dafür mit saftigen Äpfel.

Ingredients

  • 500 g Wholemeal spelt flour
  • 250 ml Milk (1.5% fat)
  • 1 cube Yeast
  • 55 g Honey
  • 100 g Yogurt butter (room temperature)
  • Salt
  • 1 small lemon
  • 1200 g large apples (6 large apples)
  • 50 g Coconut sugar
  • 3 TL Cinnamon

Instructions

    Sift the flour into a bowl. Make a well in the center. Heat the milk in a saucepan.

    Mix yeast with 1 tsp honey & about half of the lukewarm milk. Pour into the well and mix lightly with a fork with a little flour.

    Dust the surface of the yeast mixture with a little flour. Cover with a cloth and let rise at room temperature for about 30 minutes.

    Spread soft butter in pieces with 50 g honey & a little salt on the flour rim.

    Add the remaining milk and process everything with the kneading hooks of the hand mixer into a smooth, supple dough.

    Cover the dough with a damp kitchen towel and let it rise until the dough has approximately doubled in volume; this takes between 45 and 70 minutes, depending on the room temperature.

  7. 7.

    In the meantime, squeeze the lemon juice. Wash, quarter, core and peel the apples. Then slice them and mix them with the lemon juice so they don't brown.

    Briefly knead the dough by hand on a floured work surface. Roll it out to the size of a baking sheet with a rolling pin. Line the baking sheet with baking paper.

    Place the dough on the baking sheet and distribute the apple slices evenly on it.

    Mix coconut sugar with cinnamon and sprinkle the cake with it. Let rise again for 20 minutes. Then bake in a preheated oven at 200 °C (convection: 180 °C; Gas: Level 3) on the middle rack for 35–40 minutes. Let cool, cut into 20 pieces and serve.
