Ingredients

  • 80 g soft apricots
  • 125 g butter
  • 100 g sugar
  • 2 Eggs
  • 250 g flour
  • 1 tsp Baking powder
  • 1 tsp vanilla pudding powder
  • 80 g cranberries
  • 200 ml heavy cream
  • 1 packet stabilizer
  • 1 tbsp powdered sugar
  • 1 tsp orange zest (unprocessed)

Instructions

    Preheat the oven to 180°C (350°F) with top and bottom heat.

    Chop the apricots finely. Whisk the butter until pale and creamy, then gradually fold in the sugar and eggs. Mix the flour with baking powder and pudding powder, then stir into the batter. Gently fold in the apricots and cranberries. Fill a piping bag fitted with a large round tip and pipe 2–3 cm dots onto parchment‑lined baking sheet, spacing them apart. Bake for about 10–12 minutes until golden. Remove, lift the parchment, and cool on a wire rack.

    Whip the cream to half‑stiff peaks. Mix the stabilizer with powdered sugar, then fold into the whipped cream along with orange zest. Continue whipping until stiff peaks form. Spread half of the pies with the cream and place another pie on top as a lid. Press lightly and serve.
