Ingredients

  • 120 g butter
  • 120 g sugar
  • 1 egg
  • 0.5 vanilla bean (pulp)
  • 250 g flour
  • 1 tsp Baking powder
  • 150 ml milk
  • 3 tbsp cocoa powder
  • 40 g ground almonds
  • 40 g Butter
  • 3 tbsp sugar
  • 200 g marshmallow cream (jar)

Instructions

    Preheat the oven to 180°C with upper and lower heat.

    Beat the butter with the sugar until fluffy. Add the egg and vanilla pulp, mixing well. Gradually sift in the flour with baking powder, then fold in milk, cocoa, and almonds to form a smooth batter. Scoop small portions onto a parchment-lined tray and bake for about 15 minutes. Remove and let cool.

    For the filling, beat butter with sugar until pale and creamy. Fold in marshmallow cream and spread over half of the cookies (bottom side). Top with another cookie. Chill well before serving.
