Whoopie Pies

Ingredients
- 125 g soft butter
- 100 g sugar
- 2 tbsp honey
- 1 tsp vanilla essence
- 1 pinch salt
- 1 egg
- 220 g flour
- 1 tsp Baking powder
- 50 g chopped almonds
- 200 g white couverture chocolate
- 100 ml whipping cream
- 100 g butter
- 100 g powdered sugar
- 1 tbsp Lemon Juice
- raspberry syrup
- colored sprinkles
- sugar animals
Instructions

Preheat the oven to 180°C (350°F) with upper and lower heat.

Beat the butter with the sugar, honey, vanilla and salt until fluffy, then fold in the egg. Mix the flour with the baking powder and stir into the batter. Fold in the almonds. Place about 24 dough drops on a parchment-lined tray and bake for 12-15 minutes. Remove and cool.

For the filling, chop the couverture chocolate. Boil the cream, remove from heat, add the chocolate and let it melt. Allow the mixture to cool until just soft‑creamy. Beat the butter until fluffy and gradually fold in the melted chocolate. Fill a piping bag with the mixture. Pipe half of the Whoopie Pies, place a matching cookie on top and press lightly.

For decoration whisk powdered sugar, lemon juice and optional raspberry syrup into a thick glaze. Coat the Whoopie Pies with it and decorate with sprinkles and sugar animals as desired.
