Ingredients

  • 500 g spelt whole wheat spaghetti
  • Salt
  • 400 g cherry tomatoes
  • 100 g sun-dried tomatoes in oil
  • 3 cloves garlic
  • 1 Shallot
  • 4 sprigs Parsley
  • 2 tbsp olive oil
  • 60 ml vegetable broth
  • 100 g pine nuts
  • 3 tbsp white balsamic vinegar
  • Pepper

Instructions

    Cook the pasta in boiling salted water according to package instructions until al dente. Meanwhile, wash and quarter the cherry tomatoes. Drain the sun-dried tomatoes and chop them finely. Peel and dice the garlic and shallot. Wash the parsley, shake off excess water and roughly chop.

    Combine oil with vegetable broth, sun-dried and fresh tomatoes, garlic, shallot, parsley, pine nuts and vinegar in a bowl; season with salt and pepper. Drain the pasta, toss it with the tomato mixture and divide among four plates.
