Ingredients

  • 20 g yeast
  • 350 g water (lukewarm)
  • 10 g salt
  • 500 g spelt whole‑wheat flour
  • 2 tbsp flaxseeds
  • 1 tbsp Sesame seeds
  • honey (cold‑pressed)

Instructions

    Preheat the oven to 200 °C fan.

    Mix flour and salt, create a well. Dissolve yeast in some warm water and pour into the well; add remaining water and knead into a smooth dough for about 10 minutes until elastic and barely sticky. Adjust moisture with extra water or flour if needed. Fold in sesame and flaxseeds.

    Cover and let rest for about 60 minutes. Punch down, divide, shape into rolls, place on parchment‑lined tray and bake for 20 minutes. During baking put a pan of boiling water in the oven to create steam. Cool rolls on a wire rack and serve warm with honey and optional butter.
