Ingredients
- 500 g wheat flour (Type 550)
- 0.5 cube yeast (about 21 g)
- 0.5 tsp Sugar
- 1 tsp salt
- flour for working
- butter for the baking tray
- 2 tbsp milk
- poppyseed and sesame seeds for topping

Sift the flour into a bowl, press a well in the center, crumble in the yeast and stir with the sugar, 4 tbsp lukewarm water, and a bit of flour from the rim until smooth. Cover and let rise in a warm place for about 20 minutes. Then knead the dough with the remaining flour, about 200 ml lukewarm water, and salt until it slightly detaches from the bowl edge. Cover again and let rise for another 45 minutes until doubled.

On a floured surface punch down the dough, let rest for 15 minutes, then shape into a log. Cut into 15-20 equal pieces, form balls, and place them close together on a butter‑brushed baking tray.

Preheat the oven to 200 °C (400 °F) with upper and lower heat.

Brush the rolls with milk and sprinkle with the various seeds. Bake for about 20 minutes until golden brown.
