Whole Wheat Pea Pizza

The whole wheat pizza with peas from Spoonsparrow is a healthy and tasty alternative to the greasy classic.

Ingredients

  • 0.5 cube Yeast
  • 1 tbsp honey
  • 400 g spelt whole wheat flour (+ 2 tbsp flour for handling)
  • 4 tbsp olive oil
  • Salt
  • 600 g peas (fresh split or frozen)
  • Pepper
  • 1 Organic lemon
  • 125 g mozzarella (1 ball; 45% fat in dry matter)
  • 300 g goat fresh cheese (30% fat in dry matter)
  • 10 g mint (1 handful)

Instructions

    Divide dough in half and roll each onto a floured surface into 4 round discs. Place discs on two baking trays lined with parchment paper and bake in preheated oven at 200 °C (180 °C fan; gas: level 3) for 15 minutes.

    Remove pizza bases from the oven, top with mozzarella slices and sprinkle crumbled goat cheese. Distribute peas and lemon zest over the pizzas and return to the hot oven for another 5–7 minutes until the cheese melts but the crust remains light.

    While baking, wash mint, pat dry and pluck leaves. Take pizzas out, scatter mint leaves on top and serve immediately.
