Marinated Tofu with Cucumbers

Ingredients

  • 300 g Tofu
  • 15 g ginger (1 piece)
  • 2 tbsp lemon juice
  • 1 tsp rice syrup
  • 2 tbsp rice vinegar
  • 1 tsp Sesame oil
  • 2 tbsp peanut oil
  • Cayenne pepper
  • 2 tbsp Soy sauce
  • 1 cucumber
  • 0.5 bunch scallions
  • 2 tbsp sesame seeds
  • 2 stalks Cilantro

Instructions

    Pat tofu dry and cut into about 1 cm thick slices.

    Grate ginger. Whisk lemon juice, rice syrup, grated ginger, rice vinegar, sesame oil, and peanut oil together. Season with cayenne pepper and soy sauce. Place tofu in the mixture and let marinate for about 2 hours.

    Meanwhile, peel and wash cucumber, then slice diagonally into thin rounds. Wash scallions, trim them; cut the white parts into thin rings and the green parts into thin strips.

    Toast sesame seeds in a dry pan over medium heat until golden brown, remove and cool. Rinse cilantro, shake off excess water, and pick leaves off stems.

    Layer tofu alternately with cucumber slices on four plates, drizzle with remaining sauce, then sprinkle with toasted sesame seeds, scallions, and cilantro.
