Herring Bean Salad
Heringssalat mit grünen Bohnen und Wasabi-Apfel-Sauce: Herzhafter Sattmachersalat, der mit jeder Menge wertvoller ungesättigter Fettsäuren punktet.
Ingredients
- 250 g green beans
- Salad salt
- 0.5 tsp wasabi powder
- 4 tbsp apple juice
- Pepper
- 1 tbsp Rapeseed Oil
- 1 Spring onion
- 150 g sour apples (1 sour apple)
- 200 g celery stalks (3 sticks)
- 240 g herring fillets (Bismarck herrings; 3 herring fillets)
- 1 pack watercress
Instructions

Clean, wash beans and steam covered in lightly salted water for 12–14 minutes.

Meanwhile whisk wasabi powder, apple juice, 2 tbsp hot water, salt, pepper and oil into a sauce.

Trim spring onion, wash and slice thinly. Quarter apple, core, peel and dice small.

Add apple cubes and spring onion rings to the sauce.

Drain beans, let them drain well and mix into the sauce. Let cool.

Wash celery, trim, optionally de-fiber and slice finely.

Drain herring fillets and cut into strips. Mix with celery slices and beans; let rest about 30 minutes.

Trim watercress from bed. Season salad again with salt and pepper, sprinkle with watercress and serve.
