Ingredients

  • 500 g tomatoes
  • 1 Shallot
  • 1 Garlic clove
  • 1 EL tomato paste
  • 2 EL olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 TL sugar
  • 200 g spaghetti
  • 40 g Parmesan
  • 0.5 bunch arugula

Instructions

    Blanch the tomatoes for a few seconds, shock in ice water, peel, quarter, seed and dice finely.

    Sauté the shallot and garlic in hot oil until translucent, add tomato paste and tomatoes, season with salt, pepper and sugar, cover and simmer over low heat for about 15 minutes, taste.

    Cook spaghetti in plenty of boiling salted water to al dente.

    Wash, rinse, dry and shake off excess water from arugula.

  5. 5.

    Drain pasta, let it drip, then immediately mix with tomato sauce and arugula. Plate, grate parmesan on top, serve immediately.
