  • 1 cup wheat flour
  • 1 cup rye flour
  • 3 tsp cumin
  • 0.5 tsp coriander
  • 0.5 tsp Fennel seeds
  • 4 eggs
  • 2 cups water
  • 2 tsp sea salt
  • 1 stalk leeks

    Grind rye, wheat, coriander and fennel into fine powder. Mix the flour with eggs, water and salt to form a batter. Wash the leeks, halve them and slice into rings. Heat oil in a large pan, add the leeks and sauté briefly. Pour the batter over the leeks and let it set for about 2-3 minutes. Then cut into pieces with a spatula or knife and flip. Continue cutting and flipping during cooking until everything is cooked through (about 10 minutes).
