- 150 g flour
- 0.5 tsp Salt
- 225 ml milk
- 2 Eggs
- mineral water (as needed)
- 4 tomatoes
- 300 g mozzarella
- Basil
- Salt
- freshly ground pepper
- olive oil
- basil for garnish
- butter clarified butter for frying

Whisk all ingredients for the pancake batter in a bowl and cover for about 20 minutes. If the batter is too thick, stir in more mineral water.

Slice tomatoes and mozzarella into rounds.

Line two baking trays with parchment paper and preheat the oven to 250°C (482°F).

In a large pan with clarified butter, fry four thin pancakes and place them on the baking trays. Top each pancake with tomato slices, mozzarella, and basil; drizzle with olive oil and season with salt and pepper. Bake in the hot oven for several minutes until the cheese melts and turns lightly brown. Sprinkle with fresh basil before serving.
