Spicy Pancakes with Bacon and Gooseberries

Ingredients

  • 500 g gooseberries
  • 1 EL sugar
  • 50 ml water
  • 250 g whipping cream
  • 120 g smoked bacon
  • 0.25 l milk
  • 4 eggs
  • 160 g flour
  • 4 tsp butter
  • 1 EL fresh grated horseradish
  • Salt
  • pepper (ground)
  • 1 EL mint (chopped)

Instructions

    Wash the gooseberries gently and remove stems. Combine berries with water and sugar in a pot, bring to a brief boil, then strain through a sieve. Whip cream until stiff and fold into the gooseberry puree. Chill the berry cream.

    Slice bacon into thin strips. Mix milk, eggs, salt, and flour into a smooth batter. Heat some butter in a pan, fry a quarter of the bacon strips, then pour batter over them.

    Bake a total of four pancakes. Arrange pancakes on plates, dust with horseradish, spread gooseberry cream on top. Season pancakes with salt and pepper and garnish with mint before serving.
