Ingredients
- 500 g apricots
- flour (for dusting)
- butter (for the baking sheet)
- 200 g butter
- 200 g sugar
- 1 pinch salt
- 4 eggs
- 300 g whole wheat flour
- 150 g ground hazelnuts
- 120 ml milk
- 100 g peeled sunflower seeds

Peel, halve, pit and dice the apricots. Dust with a little flour.

Preheat oven to 180°C (350°F) fan or conventional and grease a baking tray.

Whisk butter, sugar and a pinch of salt until creamy, then add eggs one at a time. Mix whole wheat flour, baking powder and hazelnuts; alternate adding milk and the dry mix to form a smooth batter. Fold in apricots, spread batter on prepared tray, sprinkle sunflower seeds and bake 40‑45 minutes or until a skewer comes out clean. Cover with buttered parchment while still hot to prevent burning.

Remove finished cake from oven, cool, cut into pieces and serve.
