Ingredients

  • 6 sheets white gelatin
  • 1 Vanilla bean
  • 500 ml whipping cream
  • 60 g sugar
  • 2 passion fruits
  • 1 Kiwi
  • 1 tsp Honey
  • 1 tsp lemon juice
  • 1 tbsp sesame (roasted)

    Soak the gelatin in cold water. Split the vanilla bean lengthwise and bring the cream and sugar to a gentle boil with it. Simmer gently for about 10 minutes, then remove from heat, let cool briefly, and stir in the well-extracted gelatin. Let cool for another 10 minutes, then remove the vanilla bean again. Rinse four glasses with cold water, fill them with the vanilla cream, cover, and chill for at least 4 hours.

    Halve the passion fruits and scoop out the pulp along with the seeds. Pass through a fine sieve to remove the seeds. Peel the kiwi and lightly mash its flesh with a fork into chunks. Mix the passion fruit pulp, honey, and lemon juice; spoon onto each panna cotta before serving and sprinkle with sesame seeds.
