Whole Wheat Apple Cake

The whole wheat apple cake from Spoonsparrow sweetens your afternoon!
Ingredients
- 2 Apples
- 3 tbsp Lemon juice
- 100 g raisins
- 2 egg yolks
- 75 g honey (5 tbsp)
- 150 g butter
- 150 ml coconut milk
- 150 g shredded coconut
- 1 pinch salt
- 1 tsp ground cinnamon
- 320 g spelt whole wheat flour
- 3 tsp Weinstein baking powder

Wash apples, quarter them, remove cores and finely dice. Drizzle with lemon juice.

Rinse raisins and let them drain.

Whisk egg yolks with 4 tbsp honey until frothy. Add softened butter, coconut milk, 80 g shredded coconut, salt, and cinnamon; mix well. Combine 220 g flour with baking powder and stir into the wet mixture. Fold in apple cubes and raisins, then pour into a greased pan and smooth the top.

For the crumble, quickly knead remaining flour, leftover shredded coconut, butter, and 1 tbsp honey together until crumbly. Sprinkle over the cake and bake in a preheated oven at 200 °C (180 °C fan or gas mark 3) for about 40 minutes. Let cool in the pan before serving.
