Apple Cake in a Cup

Apple cake in a cup by Spoonsparrow is a delicious dessert. Ideal when you expect guests because the little cakes look pretty.

Ingredients

  • 175 g flour (Type 1050)
  • flour for rolling out dough
  • 120 g butter
  • 1 egg
  • a pinch of salt
  • 2 tbsp Whole wheat breadcrumbs
  • 500 g apples
  • 1 tbsp Lemon Juice
  • 30 g coconut sugar
  • a pinch of cinnamon powder
  • 1 egg yolk

Instructions

    Knead a shortcrust pastry from flour, 100 g butter, an egg and salt; wrap in cling film and chill for 30 minutes.

    Butter four oven‑proof cups.

    Divide the dough into two parts and roll each out. Cut circles from both halves: four with the cup diameter, four slightly larger. Line the cups with the larger dough circles, sprinkle with breadcrumbs. Shape decorations from the remaining dough as desired.

    Wash, peel, halve, core and chop apples. Mix apple pieces with lemon juice, coconut sugar and cinnamon; fill the cups. Place dough circles on top and press the upper edge firmly onto the lower one. Cover with remaining dough and brush with egg yolk. Bake in an oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for about 25–30 minutes until golden brown. Remove from the oven and serve warm or cold.
