Apple Tart with Puff Pastry

Ingredients
- 400 g whole wheat puff pastry
- 1 tsp butter
- 5 apples
- 1 Organic lemon
- 250 g crème fraîche
- 2 tbsp honey
- 3 eggs
- 2 tbsp apple jam

Cut the puff pastry in half and roll each piece to fit a tart pan; grease the pans with butter and line them with the pastry.

Peel, quarter, core the apples, and score them lengthwise several times. Wash the lemon hot, pat dry, grate its zest, and squeeze out the juice. Drizzle the apples with half of the lemon juice and arrange on the tart crust.

Whisk the crème fraîche with honey, remaining lemon juice, and zest until smooth. Separate the eggs; fold the yolks into the cream mixture. Beat the whites to stiff peaks and fold them in gently. Spread over the apples and bake in a preheated oven at 200 °C (180 °C fan or gas mark 3) for about 40 minutes until golden brown. Warm the apple jam in a saucepan and brush it over the cake. Let cool.
