Whole Wheat Apple Cake

Ingredients

  • 1 kg tart apples
  • 1 organic lime (juice and zest)
  • 300 g spelt whole‑grain flour
  • 2 tsp Baking powder
  • a pinch of salt
  • 5 eggs
  • 250 g coconut palm sugar
  • 1 Vanilla bean
  • 100 ml Rapeseed oil
  • 4 tbsp orange juice
  • 60 g pistachio nuts

Instructions

    Wash the apples and cut them into wedges. Drizzle with lime juice.

    Line a baking tray with parchment paper. Scrape out the vanilla bean’s seeds. Mix the flour, baking powder, and salt. Whisk the eggs, vanilla seeds, and coconut palm sugar until frothy. While whisking, add the oil, lime zest, and orange juice. Add the dry mixture and stir quickly. Spread the batter on the tray and top with apples. Bake in a preheated oven at 180 °C (fan: 160 °C; gas: level 2–3) for 30–40 minutes until golden brown (test with a skewer).

    Let it cool slightly. Chop the pistachios finely and sprinkle over the cake. Let the cake cool completely, then cut into pieces and serve.
