Cucumber Roll-Ups with Turkey
Filled cucumber rolls with turkey breast: almost no fat but plenty of protein: saving calories can be fun and satisfying. Sophisticated in every way.
Ingredients
- 1 Mini Cucumber
- Salt
- 2 sprigs Basil
- 40 g peeled pickled red pepper strips (drained weight; jar)
- 50 g smoked turkey breast (2 slices)
Instructions

Wash the cucumber, pat dry with paper towels, peel and core it.

Using a vegetable peeler, slice around 12–14 very thin rings lengthwise so that only the inner part of the cucumber remains with its seeds.

Lay the cucumber slices side by side and sprinkle lightly with salt.

Wash basil, shake off excess water and pluck the leaves. Set aside a few, finely shred the rest into strips.

Slice pepper lengthwise into strips. Cut turkey into fine long strips as well and mix both in a bowl with the basil strips.

Pat the cucumber slices dry with paper towels again.

Arrange 3–4 cucumber slices side by side lengthwise, slightly overlapping each other.

Spread the pepper‑turkey filling over them and roll up the cucumber slices into rolls. Garnish with remaining basil leaves.
