Ingredients
- 40 g soft butter
- 2 tbsp sugar
- 1 Egg white
- a pinch of salt
- 125 g Whole wheat flour
- 1 tsp Baking powder
- 125 g yogurt
- butter (for the waffle iron)
- banana slices
- fresh berries (optional)
- maple syrup

Whisk the butter with the sugar until fluffy. Beat the egg white with the salt to stiff peaks. Mix the whole wheat flour with the baking powder and gradually fold in the yogurt, alternating with the butter mixture. Finally fold in the beaten egg white. The batter should fall off a spoon in thick strands. Cook in a hot waffle iron with little fat.
