Whole Grain Toast Sandwich with Mozzarella, Tomato and Arugula

Ingredients

  • 2 balls of mozzarella (125 g each)
  • Salt
  • Pepper (freshly ground)
  • 4 plum tomatoes
  • 1 handful of arugula
  • 60 g black olives (pitted)
  • 8 slices of sandwich bread
  • 2 tbsp olive oil
  • 2 tbsp balsamic cream

Instructions

    Slice the mozzarella, season with salt and pepper. Wash the tomatoes and slice them as well.

    Wash the arugula and shake off excess water. Halve the olives and toast the bread.

    Drizzle 4 slices of bread with olive oil. Layer arugula, mozzarella and tomato on top and drizzle with balsamic cream. Cover with the remaining bread slices.
