Whole Grain Oatmeal Bread

Ingredients
- 500 g wheat whole‑grain flour
- 125 g fine rolled oats
- 350 ml buttermilk
- 1 cube yeast
- 1 tbsp honey
- 125 g quark (low fat)
- 2 tsp salt
- 1 pinch anise
- 0.5 tsp caraway seeds
- 2 tbsp oats (for sprinkling)

Place the flour in a bowl and make a well in the center. Crumble the yeast into the well and pour the honey over it. Wait until the yeast dissolves. In the meantime, warm the buttermilk to lukewarm temperature. Pour about 150 ml of buttermilk into the well. Stir with the yeast and a little flour from the rim of the well. Let rise for 15 minutes. Add the remaining buttermilk, 125 g fine rolled oats, quark, salt, and spices. Knead everything well. Cover and let the dough rise in a warm place for about 30 minutes. Knead the dough again.

Line a baking tray with parchment paper, place the dough on it, and shape into a loaf. Brush with lukewarm water and sprinkle with the remaining oats. Bake at 200 °C in a preheated oven for about 50–60 minutes.
