White Wine Punch with Apricots, Lemon Zest and Mint

Ingredients

  • 1 small can apricots
  • 0.5 bunch mint
  • 1 lemon (untreated)
  • 2 bottles semi-dry white wine
  • 1 bottle sparkling water

Instructions

    Drain apricots in a sieve. Rinse mint, shake dry and pluck leaves from stems. Wash lemon hot, dry and cut zest into spirals with a paring knife. Slice apricots into wedges.

    Add apricots, mint leaves and lemon spiral to a punch bowl.

    Pour one bottle of white wine over the fruit and chill in refrigerator for 1 hour.

    When serving, pour the second chilled bottle of wine and sparkling water into the bowl.
