White Wine Pear

Ingredients
- 1 untreated lemon
- 1 piece ginger (about 4 cm)
- 500 ml dry white wine
- 1 cinnamon stick
- 1 tsp cloves
- 3 cardamom pods
- 2 star anise
- 150 g sugar
- 4 ripe pears (e.g., Williams Christ)

Wash the lemon hot, dry rub it, cut half of the zest into strips and then squeeze out the juice. Peel the ginger and slice thinly.

Bring the wine with ginger, spices, sugar, 1 tbsp lemon juice and zest to a boil in a pot. Simmer for about 10 minutes over medium heat.

Wash, peel pears and add them to the simmering liquid. Poach gently for about 8 minutes, remove from heat and let the pears cool in the liquid. Remove cloves, cinnamon stick, cardamom and star anise from the liquid.

Place pears on a plate, pour some of the liquid over them and garnish with star anise if desired before serving.
