White Wine Peaches

Ingredients
- 400 g raspberries
- 1 EL powdered sugar
- 2 EL orange juice
- 4 ripe peaches
- 1 Organic Orange
- 0.5 Organic lemon
- 175 g sugar
- 500 ml dry white wine
- 1 Vanilla bean
- 4 scoops vanilla ice cream
- almond cookies (for garnish)

Rinse the raspberries and place them in a tall mixing bowl. Puree with an immersion blender or regular blender until smooth. Strain through a fine sieve. Sweeten to taste with powdered sugar and enhance with orange juice.

Wash and clean the peaches. Slice the orange and lemon into thin rounds. Place the peaches in a wide pot, add the sugar and wine. Split the vanilla bean lengthwise, scrape out the seeds, and add them along with the citrus slices to the fruit. Cover and bring to a boil, then simmer over very low heat for about 10 minutes. Remove from heat and lift the peaches with a slotted spoon, letting them drain.

Arrange each peach in a small bowl topped with raspberry sauce, a scoop of vanilla ice cream, and an almond cookie. Serve the remaining raspberry sauce on the side in a small saucer.
