Ingredients

  • 4 tbsp Lemon juice
  • 1 tbsp sugar (optional)
  • 2 apples (e.g., Boskop)
  • 1 cinnamon stick
  • 1 piece unprocessed lemon zest
  • 1 kg potatoes
  • 1 onion
  • 1 cup matzemehl flour
  • 1 egg yolk
  • Salt
  • Pepper
  • vegetable oil (for frying)

Instructions

    For the sauce mix the lemon juice with 100 ml water, add sugar and bring to a boil. Meanwhile peel, quarter, core and dice the apples. Add them to the lemon liquid along with the cinnamon stick and lemon zest; simmer until the apple pieces begin to break down. Set aside to cool. Then remove the lemon zest and cinnamon, stirring occasionally.

    For the latkas peel the potatoes and onion. Grate the potatoes into a bowl, grate the onion in as well. Drain off the excess liquid. Stir flour and egg yolk into the raw potato mixture until a thick batter forms. Season with salt and pepper. In a non‑stick pan with a little oil, fry small patties portion by portion: spoon a bit of the batter into the pan and spread it thinly. Cook 2–3 minutes per side over medium heat until golden brown. Keep warm in a 70 °C fan oven if desired until all patties are cooked. Serve with the apple sauce.
