Mango Parfait with Dates

Ingredients
- 50 g dried mango
- 60 g dried dates (pitted)
- 30 ml Cointreau
- 3 eggs
- 100 g sugar
- 1 tbsp mango puree (jarred)
- 300 ml heavy cream (at least 30% fat)
- 1 packet gelatin powder
- mango puree (from the jar, for serving)
- Cointreau (to taste)

Soak the dried mango in hot water for 30 minutes. Then squeeze out the liquid and finely chop the mango. Finely chop the dates as well and marinate them with the mango in Cointreau for 15 minutes.

Beat the eggs with sugar until frothy. Stir in the mango puree and the marinated dried fruits. Whip the cream with gelatin powder until stiff, then fold into the egg mixture. Rinse four small molds with cold water and fill them with the batter. Freeze for at least 3 hours.

Place the molds in the refrigerator half an hour before serving. If needed, briefly dip them in hot water to loosen and unmold. Serve topped with mango puree mixed with Cointreau to taste.
