Coffee Pasta with Mango and Pineapple Sauce

Ingredients
- 250 g flour
- 1 pinch salt
- 1 egg
- 1 tbsp Olive Oil
- 40 ml cold espresso
- 1 ripe Mango
- 250 g pineapple
- 3 fresh figs
- 1 red chili pepper
- 2 tbsp butter
- 75 ml dry white wine
- a splash light soy sauce

Knead the flour with salt, egg and oil, gradually incorporating the espresso. Shape the dough into a ball and let it rest for 20 minutes.

Divide the dough into four portions, roll each into thin sheets using a pasta machine or rolling pin. Cut the sheets into wide ribbon noodles with a knife or pasta cutter attachment.

Peel the mango, cut the flesh from the pit and dice it. Peel the pineapple, remove the core and dice it as well. Slice the figs into narrow strips. Wash the chili, halve lengthwise, deseed and slice into strips. In a pan melt butter, sauté the chili, add the fruit and deglaze with wine. Season with soy sauce and remove from heat.

Cook the noodles in boiling salted water until al dente, drain and set aside. Toss the noodles with the fruit sauce, warm through briefly, then plate and serve.
