White Glazed Muffins

Ingredients
- 185 g white chocolate
- 80 g dried cranberries (finely chopped)
- 100 g butter
- 100 g sugar
- 125 ml milk
- 1 egg
- 3 tbsp yogurt
- 250 g flour
- 2 tsp cornstarch
- 1 tbsp baking powder
- 3 tbsp organic lemon zest
- 1 pinch salt
- 200 g powdered sugar
- 2 tbsp lemon juice
- food coloring (silver gray or silver)

Preheat the oven to 180°C (350°F) fan-forced.

Cut the chocolate into small pieces with a knife. Melt the butter in a saucepan, add 50 g of chocolate and let it melt. Whisk together milk, egg, yogurt and sugar using an electric mixer. In a bowl combine flour, cornstarch, baking powder, lemon zest and salt well. Add the milk mixture, chocolate butter, cranberries and remaining chocolate pieces to the dry mix and stir with a wooden spoon until smooth. Spoon batter into 12 cupcake tins and level the tops. Bake for 25–30 minutes (test with a toothpick). Cool on a wire rack.

For decoration whisk powdered sugar with lemon juice into a thick glaze and spread over the cupcakes. Optionally decorate with a brush and food coloring in silver gray.
