Ingredients

  • 300 g dark chocolate
  • 2 pears
  • 2 Bananas
  • Lemon juice
  • 8 eggs
  • Salt
  • 250 g softened butter
  • 150 g sugar
  • 150 g flour
  • 150 g Ground Almonds
  • 2 tsp Baking powder
  • 100 g dark chocolate

Instructions

    Melt chopped chocolate in a double boiler, stirring occasionally and letting it cool slightly.

    Quarter the pears, peel, remove pits. Peel bananas. Dice fruits and mix with lemon juice.

    Separate eggs. Beat egg whites with a pinch of salt until stiff peaks form.

    Cut butter into pieces and beat with sugar until fluffy. Gradually fold in yolks, then melted chocolate.

    Whisk flour with almonds and baking powder; fold into batter with fruit mixture. Fold in meringue. Spread batter on a greased baking sheet and smooth top. Bake at 200°C (medium) for about 25 minutes.

    Remove cake and let cool.

    Break the semi‑bitter chocolate, melt in double boiler, spread over cake or drizzle with chocolate shavings. Cut into cubes and serve.
