Polish-Style Cherry Doughnuts

Ingredients
- 1 cube fresh yeast (21 g)
- 250 ml lukewarm milk
- 75 g sugar
- 500 g flour
- 1 pinch salt
- 100 g small pitted cherries
- 1 kg frying oil (for deep‑frying)
- powdered sugar (for dusting)

Rouse the yeast in a little lukewarm milk with 2 tsp sugar until smooth. Mix the flour with the salt, then add the activated yeast, remaining milk, sugar and cherries; knead into a smooth, elastic dough. Cover and let rise in a warm place for about 1 hour.

Heat the oil in a wide pot. It is ready when small bubbles appear on a wooden spoon handle placed in it.

Using a large tablespoon, scoop portions of dough, shape oval and slightly flat, then drop them into the hot oil. Fry 3‑4 minutes until golden brown, turning once.

Remove the fried doughnuts with a slotted spoon, drain on paper towels, and serve warm dusted with powdered sugar.
